Kefir Bircher

Bircher with KefirThe kefir based bircher recipe is an excellent breakfast item.  There is no better way to start your day than with a healthy bowl of bircher.

For those of you who are unfamiliar with Bircher, it is a wonderful breakfast dish that combines oats, fruit and cream.  Named after its inventor, the Swiss physician Maximilian Bircher-Brenner, bircher was created for nutritional reasons.  Dr. Bircher-Brenner believed that food should not just be consumed to end hunger but to create a healthy body as well.  In the process he stumbled upon a breakfast gem.  There is one advantage that we have over our clever Swiss physician and that is kefir.  With the probiotics and other health benefits of kefir, I am not sure it is even possible to have a healthier meal.

There are many different combinations of ingredients, but this is how I have always preferred mine:


  • ½ cup of oats
  • 3/8 cup of kefir
  • ½ apple (sliced or grated)
  • 4 strawberries
  • 1 teaspoon honey (to taste)

Preparation time: 10 min (let soak overnight)


Get a mixing bowl and stir in the oats with the kefir.  Cover the bowl with sticky wrap and place in the fridge over night.  During this time, the oats will soak up the kefir and come morning time, there should be a nice thick consistency.  Play around with the ratio of oats to kefir to find what works for you, but I have found 1 to 1 a little bit too runny.

Chop up your favorite morning fruits and combine with your now thick kefir/oat amalgamation.  Other berries or raisins also work here.   To finish it off, remove the slightly sour edge of the kefir by adding some honey and you are ready to go.  Enjoy!
