Kefir Chocolate Chip Pancakes

I don’t always make pancakes, but when I do, I prefer Kefir Chocolate Chip Pancakes.  I love regular pancakes, but the kefir gives these extra fullness and fluffiness.

For an added dimension, I also recommend experimenting with different flavored kefirs, such as strawberry or pomegranate, when making these pancakes.  I always thought of pancakes as unhealthy, but this recipes calls for only two teaspoons of sugar.  Also the chocolate chips are optional (though not as far as I’m concerned), so you have some flexibility with this recipe.  When including the chocolate chips, you don’t even need to use maple syrup on these.  I love having some orange juice or a coffee with these.  The Kefir Chocolate Chip Pancakes are a great start to any morning!

2 cups of kefir
1 3/4 cup of flour
1 teaspoon of soda
1 1/2 teaspoon of baking powder
2 teaspoons of sugar
3/4 teaspoon of salt
2 large eggs
4-6 ounces chocolate chips (optional, but extra tasty)
Mix the dry ingredients together first, then blend in eggs and the kefir and stir until moistened. As with other pancake batters, mixture will be clumpy. Cook on a griddle at 350º F.
