Kefir Parfait

Great for a dinner party, impress your guests with a probiotic sweet treat.

Obviously, this ‘parfait’ is not taken after the traditional French style, but rather the more recent, American interpretation.  I think this is a good thing, because I prefer peaches to foie gras anyway.

Ingredients (serves 2)

  • 1 cup of kefir
  • 1 cup of granola (sweet)
  • 1 peach (diced)
  • ½ cup of strawberries  (diced)
  • ½ blue berries
  • 2 teaspoons of honey

I recommend using a sweet granola here so that when combined with the honey, the slightly sour flavour of the kefir will be hidden.  This is a dessert remember, we want it to be sweet.

Start by putting down a kefir base, say of 3 or 4 spoonfuls.  Add a couple drops of honey to the kefir and cover that up with a layer of granola.  Now add a mix of our diced fruit.  Repeat this process until the cup is filled up.

Depending on the thickness of your kefir, your end result may or may not end up looking like a traditional parfait.  If you are making your own kefir, you can get it thick enough that it won’t run through your fruit.  But I always prefer my kefir a little bit runny, and as you can see in the picture my parfaits are never the layered type.  But they still taste great, and that is all that I am interested in.
