Kefir is highly digestible.  Due to its acidity and enzymes, kefir stimulates digestion of other foods, decreases the cholesterol content in blood and improves salivation and excretion of stomach and pancreatic enzymes and peristalsis.  It can even help those suffering from digestive tract disorders, such as Irritable Bowel Syndrome, Ulcerative Colitis and Crohn’s Disease.

Kefir іѕ also a rich source οf vitamin A, B2, B12, K аnd D, and contains calcium, phosphorus аnd magnesium.  Kefir grains are very high in lactic acid, which means that they break down most of the lactose in milk during the fermentation process.  Although kefir may still not be suitable for those who are lactose intolerant, it does contain significantly less lactose than milk.
